Breakfast is my favorite meal of the day and unfortunately my most rushed- on a typical day I have between 10 and 15 minutes to eat because of school, but since I believe that it is the most important meal of the day, orange juice and a bar just doesn’t cut it!
I have seen this idea on Pinterest a hundred times, but decided to try making a single serve version- which I do for almost everything LOL and the result was SO good that I just had to share!
Single Serving Egg White Quiche
– 1/2 cup egg white
– 4 cherry tomatoes
-1/2 cup spinach
– 3 button mushrooms
– 2 T chopped onion
– 2 T cottage cheese *
– 1 tsp nutritional yeast *
* The last two are completely optional, but add to the flavor : )
* Feel free to add more veggies or less depending on your taste! Bell pepper, zucchini, squash could work too!
– Chop all of your veggies and add to your egg whites in a a well greased single serve dish of your choosing and cook in the oven at 350 for around 20 minutes (just keep an eye on it, based on the amount of veggies, it could take more or less time)
I made this the night before and kept it covered in the refrigerator overnight, then popped it in the toaster.oven for 10 minutes on warm while I took a shower. Breakfast can be fast and nutritious even on the busiest of mornings with a little planning ahead : )
So thats it- super easy and healthy! Egg whites are a great source of protein and iron, and cottage cheese adds additional protein. Nutritional yeast is rich in folic acid and adds a burst of flavor, and of course starting off your day with veggies is always a good way to go!
